Soil Mostly clay-limestone soil, with a significant presence of stones and minerals

Altitude About 360 metres above sea level

Vineyards Trained on a low trellis, with 4,500 vines per hectare, yielding between 1 and 2 kg per vine

Climate Mild winters with generally dry or low-rainfall springs and hot summers, with wide temperature swings given the position of the vineyards

Harvest Hand-picked into crates in the very early hours of the day, at optimal phenolic ripeness (second half of September)

Winemaking The grapes are destemmed and the free-run must is cooled to 8-10°C with micro-maceration for 12-18 hours to allow natural clarification. After soft pressing and static settling, the clear must is fermented at a temperature of 16-18°C. At the end of fermentation it is separated from the coarse lees and left to mature on the fine lees for about 3 months. All stages take place in steel tanks

Ageing In steel for about 5 months, in the bottle for about 2 months before release

Bottling With light filtration and, when needed, natural cold stabilisation

Packaging Lightweight antique-green Burgundy bottle, 75 cl, cases of 6 bottles

Colour Straw white with greenish hints

Bouquet A fresh, fragrant bouquet with floral and exotic fruit aromas, a light note of apricot and acacia honey, and balsamic hints

Taste Fresh, soft, savoury, persistent

Alcohol content 12% vol.
