Vineyards Trained on a low trellis, with 4,500 vines per hectare, yielding between 1 and 2 kg per vine
Climate Mild winters with generally dry or low-rainfall springs and hot summers, with wide temperature swings given the position of the vineyards
Harvest Hand-picked into crates in the very early hours of the day, at optimal phenolic ripeness (second half of September)
Winemaking The separately harvested grapes are destemmed and pressed after a short maceration of about 2-3 hours. The free-run must is cooled to 6-8°C for 18-24 hours to allow natural clarification. The clear must is then racked and fermented for about 20 days at a temperature of 13-16°C. All stages take place in steel tanks
Ageing In steel for about 5 months. In the bottle for about 2 months before release
Bottling With light filtration and, when needed, natural cold stabilisation
Packaging Lightweight clear Burgundy bottle, 75 cl, cases of 6 bottles
Colour Intense pink with violet hints
Bouquet Intense, with floral notes and fruity hints of fresh fruit, peach, strawberry and blueberry
Taste Fresh, savoury and soft, with a persistent finish and good complexity
Alcohol content 12,5% vol.
