Climate Mild winters with generally dry or low-rainfall springs and hot summers, with wide temperature swings given the position of the vineyards
Harvest Hand-picked into crates in the very early hours of the day, at optimal phenolic ripeness (first half of September)
Winemaking The crushed and destemmed grapes are macerated at a controlled temperature of 5-8°C for the first 24 hours and at 21-24°C for the following 20-30 days. The subsequent slow alcoholic fermentation lasts about 30 days. This technique enhances the wine's aromatic profile and allows optimal extraction of the polyphenolic and colour components. A slow malolactic fermentation follows, balancing the harmony of flavours
Ageing In steel for at least 3 years. Partly in wood in some vintages. In the bottle for a few months before release
Bottling With light filtration and natural cold stabilisation, one-piece unbleached cork stopper 45×26
Packaging Antique-green Burgundy bottle, 75 cl, French-style cases of 6 bottles
