Vineyards 16 clones of Primitivo trained on the Apulian vertical trellis system, with 4,000 to 4,500 vines per hectare, aged 2-8-21 years, yielding between 1 and 2 kg per vine

Climate Mild winters with generally dry or low-rainfall springs and hot summers, with wide temperature swings given the position of the vineyards

Harvest Hand-picked into crates in the very early hours of the day, at optimal phenolic ripeness (first half of September)

Winemaking The destemmed but uncrushed grapes are macerated at a controlled temperature of 5-8°C for the first 24 hours and at 24-28°C for the 10-20 days following alcoholic fermentation, in order to enhance the wine's aromatic profile and allow optimal extraction of the polyphenolic and colour components. A slow malolactic fermentation follows, balancing the harmony of flavours

Ageing In steel for about 8 months. In the bottle for a few months before release

Bottling With light filtration and natural cold stabilisation

Packaging Lightweight antique-green Burgundy bottle, 75 cl, cases of 6 bottles

Colour Very intense ruby red with violet hints

Bouquet Complex, intense, balanced, with hints of fresh red fruit and aromatic herbs
